Hay lugares que aparecen como una respuesta. La Comarca apareció después de muchos años de hacer preguntas.
Durante mucho tiempo viajé buscando los mejores productos. Creía que la calidad estaba en encontrarlos.
Con el tiempo entendí que la verdadera búsqueda era otra. Había que aprender de dónde nacen. Comprender qué hace que un alimento tenga identidad. Qué necesita una tierra para seguir viva. Qué necesita una persona para hacer bien su trabajo.
La Comarca nació desde esa curiosidad. Desde las ganas de acercarnos un poco más al origen de la cocina argentina que queremos compartir.
Acá aprendimos que nada sucede por separado.
Que una semilla habla con el suelo.
Que una pastura cambia un animal.
Que una abeja también forma parte de una mesa.
Y que detrás de cada alimento siempre hay alguien que decidió cuidar antes que producir. Eso es, para nosotros, la calidad. No una meta, más bien, una manera de hacer las cosas.
Abrir las puertas de La Comarca es compartir ese camino.
Ojalá durante esta visita puedas recorrer este lugar con el mismo asombro con el que nosotros lo seguimos recorriendo todos los días. Porque todavía sentimos que estamos aprendiendo.
Y quizás esa sea la parte más linda de esta historia. Que nunca termina de enseñarnos.
There are places that arrive as an answer. La Comarca appeared after many years of asking questions.
For a long time I travelled in search of the best products. I believed quality was a matter of finding them.
In time I understood that the real search was another one. We had to learn where they come from. To understand what gives a food its identity. What a land needs in order to stay alive. What a person needs in order to do their work well.
La Comarca was born out of that curiosity. Out of the wish to come a little closer to the origin of the Argentine cooking we want to share.
Here we learned that nothing happens in isolation.
That a seed speaks with the soil.
That a pasture changes an animal.
That a bee, too, is part of a table.
And that behind every food there is always someone who chose to care before producing. That, for us, is quality. Not a goal — rather, a way of doing things.
Opening the gates of La Comarca means sharing that path.
We hope that during this visit you can walk this place with the same wonder with which we keep walking it every day. Because we still feel we are learning.
And perhaps that is the loveliest part of this story. That it never stops teaching us.

En el corazón de la Pampa, donde la llanura marca el horizonte y el tiempo se mide por los ciclos de la naturaleza, se desarrolla Don Julio Comarca Productiva: un proyecto agroalimentario integral dedicado a producir alimentos orgánicos y regenerativos desde una mirada que combina conocimiento técnico, respeto por los procesos naturales y una profunda búsqueda de la excelencia.
Más que un establecimiento rural, La Comarca es un territorio vivo donde cada producción forma parte de un mismo sistema. Pasturas, animales, huertas, frutales, fermentaciones y biodiversidad conviven bajo una misma lógica: producir regenerando.
Gran parte de los alimentos que cada día llegan a Don Julio, El Preferido de Palermo y Social Corazón nacen aquí. Cada producto expresa un origen, una estacionalidad y un proceso que comienza mucho antes de llegar a la cocina.
La Comarca es el punto de partida de una forma de entender la gastronomía argentina.
In the heart of the Pampas, where the plain draws the horizon and time is measured by the cycles of nature, Don Julio Comarca Productiva takes shape: an integral agri-food project dedicated to producing organic and regenerative food from a perspective that combines technical knowledge, respect for natural processes and a deep pursuit of excellence.
More than a rural estate, La Comarca is a living territory where every production is part of one same system. Pastures, animals, vegetable gardens, fruit trees, fermentations and biodiversity coexist under a single logic: to produce by regenerating.
Much of the food that arrives every day at Don Julio, El Preferido de Palermo and Social Corazón is born here. Each product expresses an origin, a seasonality and a process that begins long before it reaches the kitchen.

En Don Julio Comarca Productiva entendemos que la calidad comienza mucho antes del producto final: nace en el suelo, en las pasturas y en las decisiones que sostienen cada proceso.
Producimos a partir de una lógica regenerativa, donde la observación, la planificación y el respeto por los ciclos naturales nos permiten fortalecer los ecosistemas mientras obtenemos alimentos de la más alta calidad.
At Don Julio Comarca Productiva we understand that quality begins long before the final product: it is born in the soil, in the pastures and in the decisions that sustain every process.
We produce through a regenerative logic, in which observation, planning and respect for natural cycles allow us to strengthen the ecosystems while obtaining food of the highest quality.

El corazón del sistemaThe heart of the system
Las pasturas son el origen de todo lo que ocurre en La Comarca. Diseñadas según los ambientes y las características de cada lote, combinan gramíneas, leguminosas y especies nativas para conformar un ecosistema diverso, equilibrado y resiliente.
Sobre ellas se practica el pastoreo regenerativo que sostiene gran parte de la producción animal y favorece la captura de carbono, la infiltración del agua y la biodiversidad.
Pastures are the origin of everything that happens at La Comarca. Designed according to the environments and characteristics of each plot, they combine grasses, legumes and native species to form a diverse, balanced and resilient ecosystem.
On them we practise regenerative grazing, which sustains much of the animal production and favours carbon capture, water infiltration and biodiversity.

La ganadería se apoya en el engorde de novillos sobre pasturas perennes consociadas, con planificación holística del pastoreo. Este manejo no solo permite obtener una carne de calidad premium —base del prestigio internacional de Don Julio— sino que promueve la regeneración del suelo, la eficiencia en el uso de la tierra y la captura de carbono, fortaleciendo la resiliencia del sistema productivo.
Livestock farming is based on fattening steers on consociated perennial pastures, with holistic grazing planning. This management not only yields premium quality beef —the basis of Don Julio's international prestige— but also promotes soil regeneration, efficiency in land use and carbon capture, strengthening the resilience of the productive system.

Hortalizas de hoja, fruto y raíz, cultivadas respetando la estacionalidad y un calendario natural. El proceso comienza en la semilla, con producción propia de plantines, y llega a la cocina como materia prima de alto valor nutricional y organoléptico.
Leaf, fruit and root vegetables, grown respecting seasonality and a natural calendar. The process begins in the seed, with our own production of seedlings, and reaches the kitchen as a raw material of high nutritional and organoleptic value.

Contamos con un jardín de hierbas donde cultivamos especies aromáticas y medicinales bajo criterios orgánicos. Seleccionamos las variedades en función de sus usos y características, respetando sus tiempos de crecimiento. Este espacio aporta diversidad vegetal al sistema y contribuye al equilibrio biológico general.
We keep a herb garden where we grow aromatic and medicinal species under organic criteria. We select the varieties according to their uses and characteristics, respecting their growing times. This space brings plant diversity to the system and contributes to the overall biological balance.

Espacio dedicado a la producción de plantines hortícolas y ornamentales de uso gastronómico, trabajados bajo normas orgánicas, con semillas propias y de productores locales.
A space dedicated to the production of horticultural and ornamental seedlings for gastronomic use, worked under organic standards, with our own seeds and seeds from local producers.

Producción de huevos bajo pastoreoPasture-raised egg production
Las gallinas acompañan el movimiento del ganado dentro de un sistema rotativo que mejora la fertilidad del suelo, reduce naturalmente la presencia de insectos y produce huevos de excelente calidad nutricional.
The hens follow the movement of the cattle within a rotational system that improves soil fertility, naturally reduces the presence of insects and produces eggs of excellent nutritional quality.

Las ovejas cumplen un rol complementario dentro del sistema regenerativo. Además de producir carne, aportan recursos que regresan al suelo como abono y el aprovechamiento del subproducto lana como cobertura de cultivos.
Sheep play a complementary role within the regenerative system. As well as producing meat, they contribute resources that return to the soil as manure, and their wool by-product is used as crop cover.

Las colmenas albergan abejas rescatadas de enjambres urbanos, que encuentran aquí un entorno saludable para desarrollarse. El manejo Barré y la diversidad de cultivos como pasturas, árboles, hortícolas y hierbas contribuyen para que las colonias expresen su comportamiento natural.
The hives are home to bees rescued from urban swarms, which find here a healthy environment in which to develop. Barré management and the diversity of crops — pastures, trees, vegetables and herbs — help the colonies express their natural behaviour.

Más de trescientos árboles frutales conforman un paisaje productivo en permanente crecimiento. Nogales pecán, feijoas, guayabas, ciruelos, duraznos, granadas, higos, frambuesas y moras conviven con nuevas plantaciones de cítricos y especies singulares como mano de Buda, cidro y quinoto.
More than three hundred fruit trees make up a productive landscape in permanent growth. Pecan trees, feijoas, guavas, plums, peaches, pomegranates, figs, raspberries and mulberries coexist with new plantings of citrus and singular species such as Buddha's hand, citron and kumquat.

En su afán permanente por agregar valor a la producción primaria y explorar nuevas formas de elaboración, La Comarca dedica un espacio a las fermentaciones y crianzas en Wine Globes: grandes recipientes de borosilicato que permiten trabajar vinos, kombuchas, hidromieles, vinagres y otras bebidas de manera precisa y natural.
Su transparencia permite observar la evolución de cada proceso, y su forma favorece movimientos internos que aportan complejidad y estabilidad. Este proyecto se integra a La Comarca como un laboratorio vivo de experimentación, aprendizaje e innovación, donde observar los procesos naturales ocupa un lugar central.
In its permanent effort to add value to primary production and to explore new ways of making, La Comarca devotes a space to fermentations and ageing in Wine Globes: large borosilicate vessels that make it possible to work wines, kombuchas, meads, vinegars and other beverages in a precise and natural way.
Their transparency allows the evolution of each process to be observed, and their shape encourages internal movements that bring complexity and stability. This project is part of La Comarca as a living laboratory of experimentation, learning and innovation, where observing natural processes takes a central place.
